This protein packed vegetarian breakfast can be enjoyed fresh from the oven, reheated in the microwave, or even cold. You can experiment with different ‘fillings’ – banana or berries also go really well.
Ingredients:
- 100g rolled oats
- 1/2 medium apple, diced
- 150g 0% fat Greek yogurt
- 150ml semi-skimmed milk
- 1 tbsp. honey (optional)
- 1/2 tsp. ground cinnamon
- 1/2 tsp. vanilla extract
- Pinch of salt
- Preheat the oven to 180°C/350°F/gas mark 4.
- In a mixing bowl, combine the rolled oats, diced apple, cinnamon, and salt.
- In a separate bowl, whisk together the 0% fat Greek yogurt, semi-skimmed milk, honey, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until everything is well combined.
- Pour the mixture into a greased baking dish and smooth the top with a spoon.
- Bake for 25-30 minutes, until the top is golden brown and the oats are cooked through.
- Remove from the oven and let cool for a few minutes before serving.
