High Protein Vegetarian Breakfast – Yoghurt & Apple Baked Oats

This protein packed vegetarian breakfast can be enjoyed fresh from the oven, reheated in the microwave, or even cold. You can experiment with different ‘fillings’ – banana or berries also go really well. 

Ingredients:

  •  100g rolled oats
  •  1/2 medium apple, diced
  •  150g 0% fat Greek yogurt
  •  150ml semi-skimmed milk
  •  1 tbsp. honey (optional)
  •  1/2 tsp. ground cinnamon
  •  1/2 tsp. vanilla extract
  •  Pinch of salt

  1. Preheat the oven to 180°C/350°F/gas mark 4.
  2. In a mixing bowl, combine the rolled oats, diced apple, cinnamon, and salt.
  3. In a separate bowl, whisk together the 0% fat Greek yogurt, semi-skimmed milk, honey, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until everything is well combined.
  5. Pour the mixture into a greased baking dish and smooth the top with a spoon.
  6. Bake for 25-30 minutes, until the top is golden brown and the oats are cooked through.
  7. Remove from the oven and let cool for a few minutes before serving.
